    Even if you think you know what an enchilada or a tostada is because you lived in {Mexico, Nicaragua, Costa Rica, ...} this is a great page. Like all the Central American countries I have lived in, names change. And, sometimes names don't change but ingredients do. A Nicaraguan will expect red beans in their Gallo Pinto whereas a Tico will expect black -- which Costa Rica buys from Nicaragua.
