Tostones with Pesto

Tostones are fried slices of green platano -- a common snack in Nicaragua, sometimes served with slices of cuagada (Nicaraguan fresh cheese) on top. You peel the platano, slice into about 3/8" thick rounds, fry in oil until soft, flatten and then fry on the other side.

We seldom see green platano here but they appeared in the public market so Rocio decided to make tostones. We were eating them with some strange semi-liquid cheese and I wondered what putting pesto (Rocio had made that the day before) on them. Delicious. Not exactly traditional but really good.
